Bin 311 is the classic example as it now sits firmly under Yattarna as a huge overachiever. The fruit sources change every year as Gago and company go after the coolest fruit of the year. In 2018 the 311 mix was Adelaide Hills, Tumbarumba, and Tasmania. After ten months in 30% new French oak barriques, the resulting juice was electric with a lemon core of acidity flecked with spicy cashews, pear, and creamy lees to balance its taut, linear styling. South Australia, AustraliaFruit for the 2018 Bin 311 comes from the cool climate regions of Adelaide Hills, Tumbarumba, and Tasmania, a big focus of Penfolds, and a style in which they are excelling. This spent 10 months in French oak barriques (30% new) prior to bottling. Lemony acidity is at the core, and runs this greyhound sleek wine to a winning finish, joined with attractive flickers of reduction, tight pear, cashew, and spice. The wood provides just the right level of bracketing for the fruit, firm to guide a few years in the cellar, but not overwhelming at all.
