This massale selection pecorino grows at 350m, on limestone marls, and was fermented and aged briefly in stainless, preserving all its herbal, nutty, textural vibrancy. Fresh sage, dried thyme, stony salts season green fig, meyer lemon, green melon, and bosc pear, all humming with a fine textural vibrato that is alluring and moreish.
