Sant Sadurní d'Anoia, Penedès, Catalunya (Catalonia Cataluña), SpainThe Raventós family, biodynamic leaders in Spain, have owned their 90ha of land in Penedès since 1497. Silencis is varietal xarel.lo, with vines up to 50 years old, sourced from five plots in Sant Sadurni d'Anoia's Serral vineyard and its calcareous, sandy soils. After a native ferment in stainless, this spent 6 months in French barrels. Striking with green apple, fennel, pine nuts, fresh almond and streaks of flint. Very fresh and bright, highlighted with lemon peel and buzzy saline minerality, perfectly balanced off against the fine veil of lees.
