Haywire The Bub Bottle Fermented and Aged 2016

Oliver, Okanagan Valley, British Columbia, CanadaThis year The Bub shines tighter and brighter than ever. Pinot Noir and Chardonnay comes from Oliver's Secrest Mountain Vineyard, and Summerland's Watkins Family Vineyard. Primary fermentation was in a mix of stainless and concrete before bottling and secondary fermentation for 14 months. This was disgorged in late January 2018 with no dosage. Vibrant and alive with lemon pith, verbena, oyster shell, and nervy minerality, all skinned with herb-dusted lees enough to not be abrasive or sharp. Well pitched, linear and focused, with a hum of minerality that lingers far after the last bubble.
