Comox Valley, Vancouver Island, British Columbia, CanadaBeaufort Zephra is a traditional method fizz made in Comox Valley on Vancouver Island by Hollywood movie mogul James Cameron and his wife, Suzy. Interestingly, Beaufort Vineyard and Estate Winery will become the first certified organic vineyard on Vancouver Island this fall, only five years after the Camerons bought the site. Zephra is a blend of 60 percent ortega, 12 percent siegerrebe, and 28 percent 49-28-04, a Blattner hybrid grape. The nose is a sea-salt washed melange of cherries and lemons that spilled across the palate along with nectarine skin and light peach tones, finishing with grippy dryness.
