Limoux, Languedoc, Sud de France, FranceThe Domaine de l’Aigle grows on one of the highest vineyards in the Languedoc (500 metres absl) near Limoux (the historic home of French sparkling wine) in the foothills of the Pyrenees. It’s a surprisingly fresh version of chardonnay not generally associated with the south of France. The palate is an enticing mix of white fruits, spicy, nutty lees, vanilla, and citrus, with a wet stone mineral undercurrent and a dusting of sage and mint. A high-quality chardonnay wine that will age in bottle for another five to seven years.
