Veneto, ItalyIf you think you know Prosecco, but haven't tried Col Fondo, think again. Col Fondo is similar to pét-nat, though only in reference to wines from the Prosecco delineation. Here, the base wine undergoes a secondary fermentation in the bottle, but the wine is not disgorged, leaving the finished wine a bit cloudy (col fondo refers to on sediment in Italian) and on the dryer side compared to classic sweeter proseccos. It also has less pressure / finer bubbles, giving a softer, more frizzante mouthfeel. The sediment acts as a natural preservative, helping stabilize the wines. Riccardo Zanotto is one of a small group using this very traditional way of making Prosecco. It is a natural wine, with no additions or subtractions. Sour lemon, meadow grasses, dried biscuit and yeast on the slight, lightly effervescent palate.
