Bairrada, Northern Portugal, PortugalLuis Pato’s family has been producing wine since the 18th century, with his father João the first to bottle wine in Bairrada DOC after it was officially demarcated as an appellation. This is a dry (bruto) fizzy medium-rose rosé of baga, from chalky clay soils. This undergoes light pressure in a vacuum to obtain a light juice which is fermented in stainless before a second ferment in the bottle, and up to nine months on the lees. Plum, scented wild cassis, red apple on the bright, earthy palate, with piercing limey acidity, fine, light bubbles, a ripple of baga's raging tannins around the edges, and a twist of balsamic on the finish.
