Mayer Yarra Valley Cabernet 2017

Yarra Valley, Victoria, AustraliaA briny black olive swathes its way through this cabernet sauvignon, sourced from Yering, which is a warmer site than Timo Mayer's Bloody Hill vineyard. In classic Timo style, this was whole bunch fermented native, and on lees for a year prior to bottling without fining or filtration, but with a very small amount of sulphur. Wild blackberry, thorns, strawberry jam, peppercorns on a grippy / sticky palate, with pretty perfumed purple florals kissing. Natural and raw, and charmingly so.
