Chablis, Burgundy, FranceDomaine Bernard Defaix is located in the tiny village of Milly, at the foot of the Côte de Lechet, a few minutes west of the town of Chablis. The domaine was founded in 1959 by Bernard, 4th generation winegrower, who wanted to begin making wine from the vines his family had long been tending to. Today the 12 HA estate is run by Bernard's two sons, Sylvain and Didier, who oversee the organic and biodynamic program. This Chablis comes from 30 year old vines from various plots throughout the appellation, and was native fermented and raised in stainless over 10 months. Bright and creamy with lemon, wet stone, white mushroom, herbal-kissed lees on a shining, medium bodied palate. There's a shimmer of minerality that hums beneath the surface, holding interest to the buzzy, chalky finish. Bright and fresh with big minerality, citrus and resin, it remains a delicious, sipping seafood wine, be it with oysters, mussels, clams or simply-prepared white fish.
