Champagne, FranceBruno Paillard, founded in 1981, is a family-run operation and owner of thirty-two hectares of land that cover some of Champagne’s most important vineyards. The house style is sculpted from over 40 plots of land, bringing complexity via terroir. They store their reserve wines in both tanks and small oak barrels for at least three years, and uniquely blends the multi-vintage reserve wines a year before assemblage. The Brut Premiére Cuvée NV is the house wine, and Bruno Paillard’s flagship champagne. The delicious non-vintage blend of 45/33/22 pinot noir, chardonnay, and meunier are multi-vintage given its 25-48 percent use of reserve wines dating back to 1985. The final blend gets six months of ageing on the lees before bottling, and three months in the cellar post-disgorgement. Champagne, FranceMaison Bruno Paillard is relatively new for Champagne, with the house founded in 1981 by Bruno Paillard. From the beginning, their strategy has been to purchase vineyard land. They now have 106+ parcels in 30+ crus, covering the majority of their needs. My bottle is sourced from 30 vineyards, and disgorged in June 2021. It was a blend of 25 vintages since 1985, with ample (up to 50%) reserves. This is a blend of 45% pinot noir / 33% chardonnay / 22% pinot meunier, 20% of which was barrel fermented, with the cepage spending 36 months sur lie, plus six more months in bottle, and with a dosage under 6 g/L. Ample toast seasons red apple, lemon pith, roasted hazelnuts across an expansive, stony palate that rolls through the chalky finish. It was a blend of 25 vintages since 1985, with ample (sometimes up to 50%) reserves. This is a blend of 45% pinot noir / 33% chardonnay / 22% pinot meunier, 20% of which was barrel fermented, with the cepage spending 36 months sur lie, plus six more months in bottle, and with a dosage under 6 g/L (extra brut). Ripe and doughy, with brioche, red apple, fresh hazelnuts seasoned with toast across an expansive palate. Acidity is braced by lemon pith and peel, drawing this in on the end for a lingering stony finish. A comfortable, polished wine for enjoying now, able to easily handle roast chicken or turkey dishes. My bottle of Première Cuvée Brut is sourced from 30 vineyards, was disgorged in December 2019, and was a blend of 25 vintages since 1985, with 50 percent reserves. This is a blend of 45/33/22 pinot noir / chardonnay / pinot meunier, 20 percent of which was barrel fermented, with the cepage spending 36 months sur lie, plus six more months in bottle, and with a dosage under 6 g/l (extra brut). Meringue, marshmallow, fine patisserie on a tight, yet cushioned palate. Finely textured with chalky dust, this feels every inch a millefuille, with layers of pastry layered with cherry vanilla cream and kissed with lemon essence, raspberry blossom and white florals. There's a bitter white cherry skin that rasps on the finish. Many layers of complexity here.
