Township 7 Seven Stars Cuvée 2015
Fraser Valley, British Columbia, CanadaSeven Stars is bottle fermented using the traditional method, with a long secondary fermentation on its lees (here 18 months) to add texture and complexity. This blanc de blanc is made with 100 percent Naramata chardonnay grown at the estate's Hidden Terrace. After being hand riddled and disgorged the wine is topped (dosaged) with a mix of 2014 and 2015 Township 7 Reserve Chardonnay. Look for notes of fresh baked biscuits flecked with orchard apples and peaches, on a fresh citrus base. It’s a touch foamy and dry but otherwise balanced and exhibiting the elegance you expect from an all chardonnay fizz.
