East Kelowna, Okanagan Valley, British Columbia, CanadaOver the years winemaker Eric von Krosigk has shed the funk that could creep into this wine; this edition is pristine. I love the sharp focus and the stony, salty, citrus, mineral notes. Electric on the palate, this sparkler is built for the ages with a foundation of Okanagan acidity that defines the north Okanagan as the true cool climate of Canada. Already six years in the bottle, you can feel the creamy textures and toasted lees notes that permeate its refined mousse, yet it has an electricity that sets it apart from most of its peers. Freshly shucked oysters are the ticket here. The Cipes Blanc de Blanc (white from white) is made in the traditional method using 100 percent chardonnay grapes. The wine was given an extended time on its lees (48 months) and is now being disgorged in small batches as required. As good as it is today, this will improve over the next decade with proper cellaring. The fruit is all estate and certified organic.
