Sicily, ItalyThis is a wine that benefits from time, and not over chilling; let this relax and unknit in the glass some before drinking (liberally). The pixellated minerality will spill out of the glass, carried with subtle and alluring reductive notes, pine nuts, lemon thistle, meadow herbs, quince blossom and pear skin. Etna Bianco Superiore can only come from the village of Milo, embracing and facing the sea breezes, and from 700m altitude. This is forty-year-old carricante (with ten percent other autochthonous grapes) that is harvested early and spends ten months in stainless. The finish lingers with seawater freshness and salted citrus.
