The Hickinbotham Clarendon Vineyard, established in 1971, is now a part of the country’s wine heritage, supplying fruit to produce many iconic labels. Oz Winemaker Charlie Seppelt takes the lead in shiraz production. The attack is almost skinny, with spicy red fruit and spice that suggests a wine that is bigger than it is. Hand-picked at 210-230 metres, the bunches are destemmed, and the sorted berries run into open fermenters. There is a four-day cold soak with a minimum of eighteen days on the skin.
