Flat Rock Cellars Crowned Sparkling Brut 2009

Twenty Mile Bench, Niagara Peninsula, Ontario, CanadaGreen apple crisp and shining even with six years on the lees, this Twenty Mile Bench charonnday was barrel fermented and aged for six months prior to bottle for secondary fermentation. Eight g/l RS is left to balance out the crazy acidity, and just achieves it. The wine is finished with a crown cap to best preserve freshness and longevity, hence the name 'Crowned'.
