This whole bunch pressed chardonnay has 9 g RS "for the moment", Brendon Keys jokes. "If you want less, leave it in the sun." Drinking somewhere between a serious, single vineyard dry Prosecco and a housemade pear soda, lightly effervescent and gently sweet, all with a rustic riff of authenticity. This is whole bunch pressed chardonnay direct to concrete eggs for three weeks before going straight to bottle, while still undergoing fermentation. It may pour cloudy in the glass (a plus!), but on the palate it's clean and creamy and bright, brisk and lifted with the gentle fizz.
