Champagne, FranceExtra Brut Extra Old is a blend of reserve years, and the 3rd edition (visible only when the bottle isn't cold) is composed of 1990, 1998, 1999, 2008, 2009, 2012, 2013, and 2014. The mix is 50% pinot noir, 30% chardonnay and 20% pinot meunier. The wines spent 2 years on lees in vats before heading to bottle, where it spent an additional 3 years on the lees prior to disgorge February 2021, with 3 g/L. It was bottled at 4.5 bars (instead of the typical 6). Think of this as amped up classic Veuve. In addition to the double aging (2x3), this rested at least one year in cellars prior to release. The reserve wines give a gravitas, but this surprisingly is still lighter on its feet, with a wonderful lemon cut across its nougat, brioche, and quince core. The lower pressure yields a silken texture, which may be attractive to some (à la Saten), but also disappointing to those looking for a more energetic mousse, especially to carry the breadth of the reserve wines. Champagne, FranceTasted again a year and a half after this was first released, and this is coming along very nicely in the bottle. Extra Brut Extra Old is a blend of reserve years, namely the 1988, 1996, 2006, 2008, 2009 and 2010 vintages, and the mix is 47 pinot noir, 27 percent chardonnay and 26 pinot meunier. This spent three years on lees in vats (5 percent oak), before being bottled November 2013 and spending an additional three years on the lees en tirage. This was disgorged June 2016, at a 3 g/l dosage. Think of this as classic Veuve x 10. In addition to the double aging (3x3), this is more floral perfume, more biscuity brioche, more broad shouldered, more richly spiced with candied ginger. Yellow apple, pear, toast fills in the gaps in between, all sharpened with a wallop of acidity. This is powerful, almost assertive in the mouth, and much better suited to pairing with foods (meat pastries, quail, duck) than solo sipping. A blend of 1996, 2008, 2009, and 2010, this was bottled in November 2013 and disgorged in June 2016. Light brioche, piercing lemon pith with a nervy acidity and humming acidity on the end.
