Mornington Peninsula, Victoria, AustraliaInspired by Burgundy, where owner Tony Hancy also makes wine, Prancing Horse is farmed with organic and biodynamic principles under consultation from Pascal Marchand in Burgundy and Patrick Piuze in Chablis. Deeper, stonier notes in this Red Hills South pinot, filled with raspberry, dried fruit, iron and savoury leather. Larger flake mineral salts linger on the spiced finish.
