Waipara Valley, South Island, New ZealandAlmost thirty year old vines, terraced on a north-facing Waipara site yield lovely density and earthy smoked stone throughout a textural, ripe and full palate. The concentration and heft is very well supported by an equally potent spire of acidity. This was wild yeast fermented in puncheons, where it was aged sur lies.
