Waipara, Canterbury, South Island, New ZealandFrom their sedimentary and clay-rich Waipara estate vineyard, this organic, and biodynamically farmed chardonnay is from 22 year old, predominantly Mendoza clones. Whole bunch pressed, this was wild fermented in barrel, 15% new, where it also underwent full MLF. Lovely cream, apple, cashew and light toast on the silken, gliding palate. The depth of the soils shows on the grounded palate, one that finishes with an alluring saline note. Finessed, with an authentic, textural earthiness that will reward with cellaring.
