Champagne, FrancePierre Paillard is firmly ensconced among the top producers in Bouzy. The family-owned, sustainably farmed grower champagne house continues to impress each year. This is 60/40 blend of pinot noir/chardonnay. The vines average 25-years of age and span 22 Grand Cru rated parcels. It's rare to see this amount of chardonnay in a blend from this red-centric region, and gives a distinct character to this house. Four years on the lees has added ample brioche and generosity, coloured with red apple, apple pie, light raspberry and pink grapefruit scenting a pure and generous cherry core.
