Champagne J-M Sélèque Solessence Extra Brut NV

Champagne, FranceAn impressive grower champagne, crafted with minimal intervention in the vineyard blends 50/40/10 chardonnay/pinot meunier/pinot noir from seven villages spread across the Marne Valley and the Côte des Blancs. The cuvée is based on the 2013 vintage. Ten percent is fermented in oak (no MLF) with the remainder fermented in stainless steel (full MLF). Sélèque also uses 50 percent perpetual reserve held in large casks and oak that started in 2000. The Solessence Brut spent 18 months on the lees and was disgorged March 2016 with 7 g/l dosage. Red apple, white peach, green apple, bright and crisp, with a salted biscuit depth. Great textural grip on the finish, and impressive integration between the precise acidity and the pure fruit.
