Pale salmon in hue, the latest XC Method (XC in Roman Numerals speaks to 90 days in tank) is a charmat method sparkler made from pinot noir and chardonnay from Secrest Mountain Vineyard in Oliver, and Watkins Family Vineyard in Summerland. Soft on the palate, just off-dry with strawberry jam, herbal raspberries, mandarin and wild blackberries, bracketed with bracing acidity and housed in a snappy, appealing 11.5 percent package. In this case the tank is on its side, reminiscent of a Champagne bottle during its secondary ferment. Lively and off-dry, fresh and clean, with red apple, ripe pear and a toasted brioche base. A riff of mandarin acidity works to offset the RS here, though a pleasant pear / orange blossom remains. Lively and off-dry, fresh and clean this red apple, ripe pear bubble with a toasted brioche base is simply fun to drink. A riff of mandarin acidity works to offset the RS here, though pleasant pear / orange blossom notes remain.
