Under winemaker Lynzee Schatz the wine has gained a touch more sophistication for what it is, a mid day bubble made for the patio and and pre-dinner sips. Look for clean fresh pear and melon with only a hint of sweetness before a green apple skin finish. With an RS of 4 g/L, it's on the drier side, with ample white florals, pear, kiwi, and apple. Acidity is bright and lively through the snappy finish. A big improvement from when I last tasted this NV a few years back. This 70/30 mix of chardonnay and pinot blanc is an excellent example of the exploration and experimentation happening across the province, where acidity is a gift. It is primarily dry (hooray), full of floral pear, crisp apple, with a subtle frizzante bubble. A fun sparkler to while away an afternoon on a sunny patio.
