Ruffino Serelle Vin Santo del Chianti 2011

Tuscany, ItalyVin Santo, the holy wine, is a classic Tuscan dessert wine usually made from white grape varieties such as trebbiano and malvasia. The fruit is dried on straw mats or more often now, indoor on racks. While most would classify it as a dessert wine, it can be finished dry in a fino sherry style. A full amber colour, the nose is a mix of dried fruits with bits of orange peel, raisins and figs. The palate is soft and round with fine sweetness and more caramel/crème brûlée notes all with touch of oxidative complexity. A biscotti will do but anything with chocolate would be a fine match too. Serelle is allowed to oxidize and age in the small oak for some 36 months before it's blended and given another period of time to come together in stainless steel.
