After an extended cold soak, the yeast is added and it is partially fermented on its pulp before bring pressed off and finished in stainless steel. After several rackings what you get is an intense essence of blackberry fruit. The palate is jammy, with smoky, peppery, licorice flavours. Try it with ice cream or fruit pies. That said, bears like to do the same thing so if you are out of pepper spray or courage or both, you can always turn to the liquid solution. Rocky Creek captures the pure essence of the fruit and manages to get it in the bottle unadulterated.
