Niagara Peninsula, Ontario, CanadaThe first sparkling wine from Kacaba, this is charmat method chardonnay, pinot noir and riesling from Niagara Escarpment. Fresh, brisk and structured, with bright acids lifting apple butter and orchard pear notes. An overly pithy, bitter-edged grip on the finish keeps things tight, though overtly sharp at the end.
