Gimblett Gravels, Hawkes Bay, North Island, New ZealandFrom the dry riverbed soils of Hawke's Bay's Gimblett Gravels, this savoury chardonnay was wild yeast fermented in French puncheons before MLF and a month barrel aging on the lees. Potent smoked flint and creamy lees throughout this linear, fuller bodied wine, with salt roasted cashews, wild herbs and pear framed by well-integrated toasted wood and supported by a lemon curd base.
