Champagne, FranceOne of the most exciting growers in Champagne, Cédric produces organic, single vineyard, single vintage Champagnes of great character. Low intervention as can be for Champagne, this is wild yeast fermented, bottled unfiltered with no dosage. Cracked stone, light toast and ample light red fruit on the expansive and powerful palate, this blanc de noirs is from a single 1.23-acre parcel of 35-year-old pinot noir in Cote de Bechalin, Aube, and has rested on the lees for 80 months (his longest aging for his wines), giving it an umami, earthy chalk body, impressive depth and immense texture.
