It is all harvested by hand, and it gets a traditional method of a second fermentation in the bottle, hence its fine bead of bubbles. It spends at least 18 months in the cellar on its lees before disgorging. The colour is pale pink, the nose an intriguing mix of red berries and dried herbs with strawberry, cherry, and rhubarb.
