Marche, ItalyIn 1979, five partners set up this organic idyll farm in the Marche, and it remains a benchmark of natural, healthy viticulture today. This characterful pecorino is one third fermented and matured in barrique, lending impressive creaminess to the orchard fruit cushioned palate. Hay, earthy lees, toasted pine nuts, dried herb aromas carry seamless through to the lingering flake salt finish, the savoury notes bound by a tense citrus acidity and striking broken stone minerality.
