Steller's Jay Sparkling Shiraz Brut Méthode Classique NV

Okanagan Valley, British Columbia, CanadaNewly released, and as far as we know, the first sparkling shiraz in BC (Canada?). Steller's Jay Sparkling Shiraz is a bone dry, traditional method bubble, treated like a red wine and fermented on the skins for additional tannins. A light balsamic, blackberry jam aroma is continued on the medium bodied palate. Tannins are strangely super evident here, giving a roughly textured skin on the palate. The mousse is coarse and frisky, and the finish is black cherry astringent. Happy to see that this is dry and crisp, and I reckon it would suit duck or skirt steak or as it is used in Australia with turkey.Tasted: 14 December 2015Tasted by: Prices:
