A portion of the pinot noir juice gets several days of contact with the skins to extract colour and flavour, and a small amount of still pinot is added to the blend. There is a surprising amount of acidity to keep this wine fresh, but on the palate, it is all strawberries and caramel with some pomegranate and spice. This is an attractive pre-dinner sipper. Pompadour hails from California's Carneros region, just north of the San Pablo Bay. The cuvée is 72/28 pinot noir/chardonnay, where a portion of the pinot noir is allowed several days of skin contact to pull additional fruit character and colour. Expect an intriguing mature, salty, strawberry/cherry attack with light nuances of peaches, honeysuckle and spice. A creamy mineral texture carries through a dry, food-friendly finish.
