Okanagan Valley, British Columbia, CanadaThis brand new release from Okanagan Crush Pad's Narrative line is made with an ancient method, also known as méthode ancestral in its homeland of France. Here chardonnay is bottled during fermentation and not disgorged, so the lees is kept in the bottle (no fining or filtering). The result: a rawer wine as a direct result of fermentation and the CO2 bubbles trapped in the bottle. Trapped until you pop the crown cap and take in the ample light toast, earth, wild herbs, raw dough and light citrus notes. Massive foam subsides quickly, allowing the earthy, salty, yeasty, yellow apple, almond notes to ride out along the creamy palate, finishing with bitter citrus pith.
