The creamy, lees-led palate carries the same stoniness, along with tight green apple, ample lemon pith, white grapefruit, lemon curd and spent pencil eraser. Low yields and wild yeast ups the earthy, savoury complexities, while a cool ferment has preserved the zippy fruit. The finish is textured with wood hewn spice.
