Cowichan Valley, Vancouver Island, British Columbia, CanadaThis is what I'd like to see more people doing on the Wine Islands. Sparkling wine. Not, contrary to popular belief, because it's a way to use up 'under ripe' grapes. Because the cool, maritime climate and ancient soils can support grapes naturally high in acidity and create wines at the mountain top of freshness. Traditional method, this pinot noir sparkler went through full MLF to tame the marine environment's raging acidity, and was left on the lees for two years and aged in the bottle for one year. Now showing maturity, with toasted popcorn, nuts and granny smith crisp on the nose and palate, along with a cushion of nutty, creamy lees. Lemon zest and stone finishes off the crisp ending. The evolution is evident in this wine, even from just six months ago. Drink now and savour.
