Valle de Casablanca, Region de Aconcagua, ChileHandpicked in the early morning this three clone sauvignon blanc mix gets a brief 3 hours of skin contact prior to pressing. After that not much else is done other a racking off the gross lees. It is left on its fine lees with stirring between 1 to 3 times per month (based on tasting) for three months. Again the style is more Sancerre with floral, passion fruit, pink grapefruit, melon and green apple. It's both juicy and delicate with some austerity. Very food-friendly.
