Champagne, FranceThis small family house, active since the early 20th century, owns five, well-located, mid-slope Grand Cru hectares in Ambonnay. Forth gen Laetitia Billiot oversees the estate and winemaking, and has been a leading force in Champagne for younger, woman winemakers. The Reserve is a blend of 75 percent pinot noir and 25 percent chardonnay with 36 months on the lees. Wines are fermented in stainless with no MLF, are unfined and unfiltered, and disgorged to order. May bottle wine was disgorged on 31 Oct 2017, with a dosage of 11 g/l/, and was based (75 percent) on the 2014 vintage. This creamy, ample wine opens with apricot biscuit, dough and toasted cereals, with red fruits from apples through raspberries reflecting the predominance of Grand Cru pinots. Acidity is brisk and well placed, sweeping along the heft with an easy flow to a vanillin imbued finish. I always find Billiot wines rustic around the edges, though this release is showing plump elegance. A generous wine best enjoyed with sizeable scallops.Tasted: 11 October 2018Tasted by: Prices:

The Reserve is a blend of 75 percent pinot noir and 25 percent chardonnay with 24 months on the lees, and crafted of 50 percent 2014, 25 percent 2013, 25 percent 2012. All of the wines are fermented in enameled stainless steel, and none undergo MLF, fining or filtration, the latter three choices all bold moves in Champagne, and ones that pay off in complexity. The wine is honeyed, nutty and full of crackable creme brûlée, with an undercurrent of fresh red apple, Rainier cherry and lemon tones. The wine is fermented in enameled steel tanks and does not go through a malolactic fermentation. The mousse is fine and stylish with a lovely nutty, cherry, floral, citrus nose. The attack begins with creamy textures followed by ripe strawberry, citrus, baked apple/honeyed fruit with just a wisp of yeasty/toasted notes.
