Champagne Pierre Paillard Les Terres Rosés 12 Bouzy Grand Cru Extra Brut NV
Champagne, FrancePotent and heady pure strawberry, with finesse in spades, this is an elegant grower Grand Cru rosé with a surprisingly high amount of chardonnay (65 percent) in the cuvee. Lovely florals, fine, brisk white pepper and mandarine pith scent this elegant fizz. 35 percent pinot noir, of which 6 percent is still red wine, completes the blend, all based on the 2012 (70 percent) and 2011 vintages. The Bouzy rouge (2012) was wild yeast fermented and spent 18 months in oak casks before blending with the chardonnay and four years of aging on the lees. Champagne, FranceThis growers' grand cru rosé is a blend of 70/30 chardonnay/pinot noir, including 6 percent of Bouzy Rouge (still red wine from the village of Bouzy). It is based on the 2010 vintage, with some 2009 reserve blended for additional complexity. Light cherries and fresh summer raspberries overlay crisp green apple and Anjou pear in this bright orangey pink sparkler. Full in the mouth, with pink flowers, pink grapefruit, wild strawberries and salty, bright citrus acidity to the fresh finish. This would certainly stand up to your lighter pork or chicken entrée, though I'd like to fill a flute or few with my next sushi dinner.
