Alvear Solera 1927 Pedro Ximenez NV

Montilla-Moriles, SpainFew things change here, but the reliability of this iconic label makes it so attractive. The solera began in 1927, creating a tiny portion of the blend that is now closing in on 100 years. Pedro Ximenez grapes are harvested late and spread out on mats for one month to dry in the intense, southern Spain sun until they are raisins. When pressed, the must is exceptionally sweet but quickly muted with the addition of spirit. Dark maple syrup, treacle, roasted pecans, raisins, dried apricots, hoisin, coffee, walnut, orange, and toffee have a stream of acidity to keep it all fresh. It is complete in the mouth and sweet at 405 grams of residual sugar. Try with dried fruit, nuts and cheeses, or a pecan tart. This is the perfect wine to serve with ice cream at the end of a meal.
