Eden Valley, South Australia, AustraliaThis Lehmann fizz is made with chardonnay and pinot noir sourced in the Eden Valley at 380m above sea level. It's was handpicked very early in the difficult 2009 season split 55/45 between chardonnay and pinot noir. It spends five months on the primary yeast followed by 30 months in the bottle following the secondary fermentation. The nose offers up notes of freshly baked bread or brioche with hints of baked apples and honey. The attack is gentle with more flavours of honey and tropical fruits.
