Nutty, pear, dried herbs, wild flowers, is cut with a line of aniseed and whiffs of salted black liquorice and aged parmesan. The attack is dry and elegant on the palate with green apple skin, pear, ginger and spice. The mid-palate is weighty and rich with bitter, peachy fruit.
