The nose is a fruity, savoury, enticing mix of wild herbs, citrus and stony mineral notes. The palate is a mix of green apples, lemon peels, nuts and citrus rind with fresh, cleansing acidity balanced by its impressive creamy textures. This is highly dependable Spanish bubble year in and year out, made with fruit lovingly tended using sustainable, organic and biodynamic vineyard practices. The attack is fresh and dry mixing bright, mineral, crisp green apple fruit with freshly squeezed lemon that works its way to the end of a nutty palate. Dry and green apple crisp, with potent lemon peel, nuts and apple peel dominating, lifted with sharp acidity and cushioned by creamy mousse. Well-tended, this spends 18 months on the lees. Penedès, Catalunya (Catalonia Cataluña), SpainI'm fond of saying the annual tasting of 'b" never disappoints although this year the tasting was in Pacs in the heart of the Penedès region that is home to Pares Baltà. The blend is a mix of organically certified (and more recently bio-dynamically grown) Parellada, Macabeo and Xarel.lo from several sites spanning 230 to 615 metres. The wine goes through a second fermentation in bottle and remains on its lees for a minimum of 18 months. The attack is fresh and dry and all with a creamy lees underbelly and nutty, pear/green apple flavours with a stony mineral finish. Fresh nutty, creamy, apple skin aromas preview a similar creamy, nutty, mineral, floral palate.
