Champagne, FranceChampagne Ayala is one of the longer-established champagne houses, founded over 150 years ago in Aÿ. In 2005, the Bollinger family bought this neighbouring estate and set upon a resurgence for the brand, with a complete restoration of winemaking facilities and a bold new direction. This, their flagship, leads with 55% Chardonnay, with pinot noir (30%) and pinot meunier (15%) following. The wine was sourced from 70 crus, and at blending, there are 120 different stainless steel vats to work with. The wine has 40% reserves (dating back to 2016) After at least 3 years on lees, my bottle was disgorged January 2023, with 6 g/L. Ripe and doughy apple, rainier cherry, and apple blossom is seasoned with smoked stone, over a creamy nougat base. There's a kiss of oxidation on the core, which mars the balance, regrettably.
