Napa Valley, California, United StatesPhelps has a long history making German dessert-style wines dating back to the early days of winemaker Walter Schug. In 1994, perhaps the heyday of icewine globally, Phelps launched a program to late pick scheurebe grapes and freeze them cryogenically. The wine is humorously labelled 'Eisrébe.' The 2011 was picked at a modest 21.9˚ Brix and frozen to minus 5˚ F. They are then warmed up and pressed reaching a sugar content of 34º Brix then fermented to 8 percent alcohol with 22.6% residual sugar. The flavours are a delicious mix of dried fruits, mainly apricot and pear with an acceptable level of acidity.
