Gaspereau Valley, Nova Scotia, CanadaLots of fine, continuous mousse. Big nutty, toasty, green apple skin, pear, citrus, buttery aromas. Very crisp, dry, austere palate with fine mousse. Granny smith apple, earthy, lime, nutty lees, cranberry, tobacco leaf, green peach flavours. Intense but very tart, austere style with no sugar to hide behind. Oysters would be the ticket here.
