Didier, the third generation of the Gimonnet family, oversees the winemaking of this Côtes des Blancs grower champagne house based in Cuis, with 30 HA owned. Like all of their chardonnay-centric wines, this wine is crystal crisp and bright, driving through to the lingering finish. This carries 25-30% reserve wines from the previous nine harvests to provide depth and complexity. Gimonnet keeps all their reserve wines in magnum under the crown cap to preserve the freshness and prevent oxygen ingress. My bottle was disgorged in September, around 5-6 g/L. A chalky base is cut with crunchy red and green apple, lit with shining lemon pith and peel, with a kiss of meringue carrying this streamlined fizz through a lingering, saline finish. Shining lemon pith leads into a very chalky, grippy and taut palate, with green apple, meringue, lemon blossoms, and a shimmery vibrance. Fresh on the attack, though the core is polished by the reserve wines, this is an excellent solo sipper as well as oyster mate. Based on the 2015 harvest, this has 35% reserve wines from the previous 4 harvests to provide depth and complexity. Lemon pith leads into a very chalky, grippy and taut palate, with tiny white blossoms, green apple, meringue, and a shimmery vibrance. This bottle was disgorged in January 2015, and showing notes of maturity. Nougat, green apple, sea salt, elderflower and lemon open onto schisty complexity, showing a base of brioche dough, with chalky purity, vivacious intensity and a shimmery, saline-laced lemon pith to the finish. Ripe, full, round, slightly sweet and foamy palate with good acidity and freshness. Toasty, baked apple, honey, nutty, citrus, pear skin and lemon flavours.
