Bolla Valpolicella Classico Superiore Ripasso 2007

Verona, Veneto, ItalyThe blend is 70 percent corvina and corvinone and 30 per cent rondinella. This is a pretty delicious drop of wine at four years of age. Rich soft fleshy and showy it has a spicy, black fruit, liquorice nose with a touch of milk chocolate. The palate follows the black fruit and chocolate theme. After fermentation the wine is stored in stainless steel until the Amarone grapes are dried and pressed, it is then the ripasso takes place. Then the wine gets another twenty days on the skin to add body and depth and 18 months in cask and barrels. Try this with mature cheeses and or game dishes. If you are adventurous it's pretty tasty with dark chocolate.Tasted: 16 May 2011Tasted by: Anthony Gismondi and Stuart TobePrices:
