The colour is barely there, but the wine is ever present thanks to its enticing creamy textures, strawberry, pie crust, and elegant styling. It is a perfect match with smoked salmon blinis and crème fraîche. The winemaking is a simple affair: hand-picking, gentle whole bunch pressing, cool fermentation, full malolactic fermentation, assemblage, and extended ageing on lees. The palate is similarly styled with fresh red fruit and watermelon notes and an underlying brush of citrus and red berry fruit. Like the brut blanc it has an enticing creamy palate that adds a touch of class the palate from front to back. It is made from a selection of vintages and a blend of mostly pinot noir with chardonnay.
